Ingredients:

• A whole sheep
• Chile peppers
• Onion
• Salt

Process:

First the lamb is killed, washed and seasoned. Then a hole is made in the ground and filled with coals. Once hot, tapona leaves (a cactus that comes from the same plant family as the nopal) are placed around it. You then add the meat and cover it with agave leaves. It cooks all night, about seventeen hours.
