Atole is a maize and water based drink prepared all over Mexico. Chocolateatole con cacao blanco is a unique beverage from Teotitlán del Valle in Oaxaca. It is made with a white cacao called pataxte that is fermented underground between six and nine months. After the long fermentation process, the cacao seeds are washed, sun-dried, roasted, and ground in a metate with cinnamon, corn, wheat, and rice. The paste is slowly incorporated into cold water to create foam.

Bebida única de Teotitlán del Valle en Oaxaca. Se elabora con paxtate, o cacao blanco que se fermenta bajo tierra entre seis y nueve meses. Después del largo proceso de fermentación, el cacao se lava, se seca al sol, se tuesta y se muele en metate con canela, maíz, trigo, y arroz. La pasta se incorporalentamente en agua fría para crear espuma.
